Ingredients
  

  • 1 lb ground turkey
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 bell pepper, diced
  • 1 can (15 oz) diced tomatoes
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup corn kernels (fresh, frozen, or canned)
  • 2 cups chicken broth
  • 2 tablespoons chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Optional toppings: shredded cheese, chopped cilantro, sour cream, diced avocado

Instructions
 

  • In a large pot or Dutch oven, heat oil over medium heat. Add diced onion and bell pepper, and cook until softened, about 5 minutes.
  • Add minced garlic and cook for an additional minute until fragrant.
  • Add ground turkey to the pot, breaking it up with a wooden spoon, and cook until browned.
  • Stir in diced tomatoes, kidney beans, black beans, corn kernels, chicken broth, chili powder, cumin, paprika, salt, and pepper.
  • Bring the chili to a simmer, then reduce heat to low and let it cook, uncovered, for about 20-30 minutes, stirring occasionally, until flavors are well combined and chili has thickened to your desired consistency.
  • Taste and adjust seasoning if necessary.
  • Serve hot, garnished with your favorite toppings.
