Turn the oven on to 375°F, or 190°C.Add dried oregano, salt, and pepper to the chicken breasts' seasoning.
Heat the olive oil in a big skillet over medium heat.Add the minced garlic and cook for approximately a minute, or until fragrant.
After adding the seasoned chicken breasts to the skillet, cook for 5 to 6 minutes on each side, or until golden brown on both sides
After taking the chicken out of the skillet, set it aside.
Add the sun-dried tomatoes, cherry tomatoes, and chicken broth to the same skillet. Heat through to a simmer.
Add the baby spinach and heavy cream, then boil until the spinach wilts.
Spoon the sauce over the cooked chicken breasts and return them to the skillet.
Place the pan in the oven that has been prepared, and bake it for 15 to 20 minutes, or until the chicken is cooked through.
Remove from the oven and garnish with grated Parmesan cheese and fresh basil leaves before serving.
