Ingredients
  

  • 4 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 cup cherry tomatoes, halved
  • 1 cup baby spinach
  • 1/2 cup sun-dried tomatoes, chopped
  • 1/2 cup chicken broth
  • 1/4 cup heavy cream
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Grated Parmesan cheese for garnish
  • Fresh basil leaves for garnish

Instructions
 

  • Turn the oven on to 375°F, or 190°C.Add dried oregano, salt, and pepper to the chicken breasts' seasoning.
  • Heat the olive oil in a big skillet over medium heat.Add the minced garlic and cook for approximately a minute, or until fragrant.
  • After adding the seasoned chicken breasts to the skillet, cook for 5 to 6 minutes on each side, or until golden brown on both sides
  • After taking the chicken out of the skillet, set it aside.
  • Add the sun-dried tomatoes, cherry tomatoes, and chicken broth to the same skillet. Heat through to a simmer.
  • Add the baby spinach and heavy cream, then boil until the spinach wilts.
  • Spoon the sauce over the cooked chicken breasts and return them to the skillet.
  • Place the pan in the oven that has been prepared, and bake it for 15 to 20 minutes, or until the chicken is cooked through.
  • Remove from the oven and garnish with grated Parmesan cheese and fresh basil leaves before serving.
