Set oven temperature to 400°F, or 200°C. After washing and patting dry, pierce the potatoes with a fork and season with salt, pepper, and olive oil.
After putting the potatoes on a baking pan, bake them for 45 to 60 minutes, or until soft.
After taking the potatoes out of the oven, allow them to cool somewhat. Each potato should have a thin shell left after the top third is cut off and the insides are removed.
Mash the potato flesh with butter, sour cream, bacon, chives, half of the cheddar cheese, salt, and pepper in a mixing bowl until thoroughly mixed.
Re-spoon the mixture into the potato shells, then sprinkle the leftover cheddar cheese on top.
Reposition the potatoes on the baking pan, and bake for a further 15-20 minutes, or until the cheese is melted and bubbly.Garnish with extra chives and serve hot.
