  • 3 tablespoons butter

  • 4 cloves garlic, minced
  • 1 teaspoon sugar
  • 1/2 teaspoon thyme, dried
  • 1/4 cup all-purpose flour
  • 6 cups vegetable broth
  • 1/2 cup white wine (optional)

  • Gruyere or Swiss cheese, grated

Instructions
 

  • Caramelizing the Onions:
    In a large pot, melt butter and olive oil over medium heat.Add sliced onions and cook for about 15-20 minutes, stirring occasionally until they turn golden brown and caramelized.Stir in the minced garlic, sugar, and dried thyme. Cook for an additional 2 minutes.
  • Creating the Base:
    Sprinkle flour over the onion mixture and cook for 2 minutes, stirring constantly.Gradually pour in the vegetable broth and white wine (if using), while stirring to combine.Season with salt and pepper to taste. Let the soup simmer for 20-25 minutes to allow the flavors to meld.
  • Prepping the Cheesy Goodness:
    Preheat your oven's broiler.Ladle the soup into oven-safe bowls.Place a couple of baguette slices on top of each bowl.Sprinkle a generous amount of grated Gruyere or Swiss cheese over the bread slices.
  • Broiling to Perfection:
