  • 3 pounds of venison roast
  • 2 onions, sliced
  • 3 cloves of garlic, minced
  • 2 carrots, chopped
  • 2 celery stalks, diced
  • 1 cup of beef or venison broth
  • 1 cup of red wine (optional)
  • 2 sprigs of rosemary
  • Salt and pepper to taste
  • 2 tablespoons of olive oil
