Ingredients
  

  • 1 pound Italian sausage (spicy or mild)
  • 4 slices bacon, diced
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 4 cups water
  • 3 large potatoes, diced
  • 2 cups kale, chopped
  • 1 cup heavy cream
  • Salt and pepper to taste
  • Grated Parmesan cheese for garnish

Instructions
 

  • In a skillet over medium heat, cook the Italian sausage until browned.
  • Remove and set aside.In the same skillet, cook the diced bacon until crispy.
  • Remove and set aside.In a large pot, sauté the diced onion until translucent. Add minced garlic and cook for another minute.
  • Pour in chicken broth and water.
  • Add diced potatoes and bring to a simmer. Cook until potatoes are tender.
  • Stir in cooked sausage and crispy bacon. Add chopped kale and simmer until wilted.
  • Pour in heavy cream and season with salt and pepper to taste. Allow the soup to simmer for a few more minutes.
  • Serve hot, garnished with grated Parmesan cheese.
