Ingredients
  

  • 2 lbs beef chuck roast (or stew meat)
  • 2 tbsp olive oil or butter
  • 1 large onion, diced
  • 3 cloves garlic, minced
  • 4 cups beef broth
  • 1 cup water
  • 1 tbsp Worcestershire sauce
  • 1 tsp dried thyme
  • 1 tsp dried parsley
  • Salt and pepper, to taste
  • 12 oz egg noodles (preferably homemade or thick, wide noodles)
  • 2 tbsp cornstarch mixed with 2 tbsp water (optional, for thickening)

Instructions
 

  • Step 1: Prepare the Beef
    Heat olive oil or butter in a large Dutch oven over medium-high heat.
    Season the beef generously with salt and pepper.
    Sear the beef in batches, cooking each side until browned (about 3-4 minutes per side). Remove the beef and set it aside.
  • Step 2: Build the Flavor Base
    In the same pot, add the diced onions and cook until softened, about 5 minutes.
    Add the minced garlic and cook for another 30 seconds until fragrant.
  • Step 3: Simmer the Beef
    Return the seared beef to the pot.
    Add beef broth, water, Worcestershire sauce, thyme, and parsley.
    Stir to combine, then bring the mixture to a gentle boil.
    Reduce the heat to low, cover the pot, and let it simmer for 1.5 to 2 hours, or until the beef is fork-tender.
  • Step 4: Cook the Noodles
    About 15 minutes before the beef is done, cook the egg noodles according to the package instructions (if not cooking directly in the pot).
    Drain the noodles and set them aside.
  • Step 5: Combine and Serve
    Shred the beef using two forks directly in the pot.
    If you prefer a thicker broth, stir in the cornstarch-water mixture and let it cook for an additional 5 minutes.
    Add the cooked noodles to the pot and stir to coat them in the sauce.
    Taste and adjust seasoning if necessary.
    Serve hot with a sprinkle of fresh parsley, if desired.
