Ingredients
  

For the Sausage Gravy:

  • 1 pound ground sausage (mild or spicy, depending on preference)
  • 3 tablespoons all-purpose flour
  • 2 cups whole milk
  • 1 teaspoon black pepper
  • ½ teaspoon salt (adjust to taste)
  • 1 small apple, finely diced (Granny Smith or Honeycrisp recommended)

For the Dumplings:

  • 1 cup all-purpose flour
  • 2 teaspoons baking powder
  • ½ teaspoon salt
  • 2 tablespoons unsalted butter, cold and cubed
  • ½ cup whole milk

Instructions
 

  • Prepare the Sausage Gravy:
    Heat a large skillet over medium heat and add the ground sausage. Cook until browned, breaking it into small pieces with a wooden spoon.
    Add the diced apples to the skillet and sauté for 2-3 minutes until slightly softened.
    Sprinkle the flour over the sausage and apples, stirring continuously to coat the mixture evenly.
    Gradually pour in the milk while whisking to prevent lumps. Continue to cook, stirring frequently, until the gravy thickens (about 5 minutes).
    Season with black pepper and salt. Reduce the heat to low while you prepare the dumplings.
  • Make the Dumplings:
    In a medium mixing bowl, combine the flour, baking powder, and salt.
    Add the cold butter cubes and use your fingers or a pastry cutter to mix until the texture resembles coarse crumbs.
    Pour in the milk and gently stir until the dough comes together. Avoid overmixing.
  • Assemble and Cook:
    Using a spoon, drop small dollops of dumpling dough onto the simmering sausage gravy. Space them slightly apart to allow room for expansion.
    Cover the skillet with a lid and let the dumplings steam for 15 minutes. Do not lift the lid during this time to ensure the dumplings cook properly.
    Once the dumplings are puffed and cooked through, remove from heat and serve hot.
