Preheat your oven to 350°F (175°C) and grease the bottom and sides of the baking pan.
In a bowl, mix together the chopped nuts and cinnamon. Set aside.
Unroll the phyllo dough and cover it with a damp towel to prevent drying.
Place one sheet of phyllo dough into the prepared pan and brush it with melted butter.
Repeat the process, layering 7-8 sheets of phyllo dough and butter in the pan.
Sprinkle a layer of the nut mixture evenly over the phyllo dough.
Add another layer of phyllo dough, brush with butter, and sprinkle with nuts. Repeat until all the nut mixture is used, ending with a top layer of phyllo dough.
Using a sharp knife, cut the baklava into small diamond or square shapes.
Bake in the preheated oven for 45 minutes, or until golden brown.
While the baklava is baking, combine the sugar, water, honey, and vanilla extract in a saucepan. Bring to a boil, then reduce heat and simmer for 10 minutes.
Once the baklava is done baking, remove it from the oven and immediately pour the hot syrup over it, ensuring it covers the entire surface.
Allow the baklava to cool completely before serving. This allows the syrup to soak into the layers, enhancing the flavor.
