Preheat your oven to 350°F (175°C) and prepare the loaf pan by lining it with parchment paper or using non-stick cooking spray.
In a mixing bowl, mash the ripe bananas using a fork or masher until smooth.
Add the unsweetened applesauce, honey or maple syrup, and vanilla extract to the mashed bananas. Mix until well combined.
In another bowl, whisk together the whole wheat flour, baking soda, salt, cinnamon, and nutmeg (if using).
Gradually fold the dry ingredients into the banana mixture until just combined. Be careful not to overmix.
If you like, add chopped nuts or dark chocolate chips to the batter and gently stir.
Pour the batter into the prepared loaf pan and smooth the top.
Bake for 50-60 minutes or until a toothpick inserted into the center comes out clean. The baking time may vary, so keep an eye on it.
Once done, remove the banana bread from the oven and allow it to cool in the pan for 10-15 minutes. Then, transfer it to a wire rack to cool completely.
