Ingredients
  

  • 2 ripe bananas, mashed
  • 1/3 cup melted butter
  • 3/4 cup granulated sugar
  • 1 egg, beaten
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • Pinch of salt
  • 1 1/2 cups all-purpose flour

Instructions
 

  • Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners or grease lightly with cooking spray.
  • In a mixing bowl, mash the ripe bananas until smooth.
  • Stir in the melted butter, granulated sugar, beaten egg, and vanilla extract until well combined.
  • Add the baking soda and salt, then gently fold in the flour until just combined. Be careful not to overmix.
  • Spoon the batter into the prepared muffin tin, filling each cup about 2/3 full.
  • Bake in the preheated oven for 20-25 minutes or until a toothpick inserted into the center of a muffin comes out clean.
  • Remove from the oven and allow the muffins to cool in the tin for a few minutes before transferring them to a wire rack to cool completely.
