- 2 ripe bananas, mashed
- 1/3 cup melted butter
- 3/4 cup granulated sugar
- 1 egg, beaten
- 1 teaspoon vanilla extract
- 1 teaspoon baking soda
- Pinch of salt
- 1 1/2 cups all-purpose flour
Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners or grease lightly with cooking spray.
In a mixing bowl, mash the ripe bananas until smooth.
Stir in the melted butter, granulated sugar, beaten egg, and vanilla extract until well combined.
Add the baking soda and salt, then gently fold in the flour until just combined. Be careful not to overmix.
Spoon the batter into the prepared muffin tin, filling each cup about 2/3 full.
Bake in the preheated oven for 20-25 minutes or until a toothpick inserted into the center of a muffin comes out clean.
Remove from the oven and allow the muffins to cool in the tin for a few minutes before transferring them to a wire rack to cool completely.
