Ingredients
  

  • For the Biscuits: 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 1/2 cup cold butter, cubed
  • 3/4 cup milk
  • For the Gravy: 1/4 cup sausage drippings or bacon grease
  • 1/4 cup all-purpose flour
  • 2 cups milk
  • Salt and pepper to taste

Instructions
 

  • Preheat your oven to 425°F (220°C).
  • In a mixing bowl, combine flour, baking powder, and salt. Cut in the cold butter until the mixture resembles coarse crumbs.
  • Stir in the milk until a soft dough forms.
  • Turn the dough onto a floured surface and knead gently. Roll out to 1-inch thickness and cut into biscuits using a biscuit cutter or glass.
  • Place the biscuits on a baking sheet and bake for 12-15 minutes, or until golden brown.
  • For the Gravy:
    In a skillet, heat the sausage drippings or bacon grease over medium heat.
  • Whisk in the flour to create a roux, cooking for 1-2 minutes until lightly browned.
  • Gradually pour in the milk, whisking constantly to avoid lumps.
  • Cook the gravy until thickened, about 5-7 minutes, stirring occasionally.
  • Season with salt and pepper to taste.
