Ingredients
  

  • 2 cups dried black-eyed peas
  • 1 large onion, finely chopped
  • 3 cloves garlic, minced
  • 1 can diced tomatoes
  • 1 red bell pepper, diced
  • 2 tablespoons olive oil
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions
 

  • Soak the black-eyed peas: Overnight soaking is recommended. Rinse them thoroughly before use.
  • Sauté onions and garlic: In a pot, heat olive oil and sauté chopped onions and minced garlic until golden brown.
  • Add bell pepper and spices: Toss in diced red bell pepper, cumin, paprika, salt, and pepper. Stir well.
  • Introduce tomatoes: Pour in the diced tomatoes, stirring the mixture until it forms a rich base.
  • Incorporate black-eyed peas: Add the soaked black-eyed peas to the pot and cover them with water. Bring to a boil and then simmer until the peas are tender.
  • Garnish and serve: Finish off with fresh cilantro. Serve hot in bowls.
