Ingredients
  

  • 4 cups fresh blueberries (or frozen, thawed)
  • 1 cup granulated sugar (adjust to taste)
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract
  • 1 tablespoon cornstarch (to thicken the filling)
  • 1 ½ cups all-purpose flour
  • 2 teaspoons baking powder
  • ½ teaspoon salt
  • 1 cup milk
  • 1 stick (½ cup) unsalted butter, melted
  • Optional: 1 tablespoon sugar to sprinkle on top

Instructions
 

  • Preheat the Oven
    Preheat your oven to 375°F (190°C) and grease your 9x13-inch baking dish with a bit of butter or non-stick spray.
  • Prepare the Blueberry Filling
    In a large mixing bowl, combine the blueberries, 1 cup of sugar, lemon juice, vanilla extract, and cornstarch.
  • Stir gently until the blueberries are well coated. The cornstarch helps thicken the blueberry filling as it bakes. Pour this mixture into the prepared baking dish and spread it evenly.
  • Make the Biscuit Batter
    In another bowl, whisk together the flour, baking powder, salt, and 1 tablespoon of sugar.
  • Gradually stir in the milk and melted butter until a smooth batter forms. The batter should be slightly thick but still easy to pour.
  • Add the Batter on Top
    Spoon the batter over the blueberry filling, trying to cover as much of the blueberries as possible.
  • Don’t worry if the batter doesn’t cover the entire surface; the batter will spread and rise as it bakes.
  • Bake the Cobbler
    Place the baking dish in the preheated oven and bake for 40-45 minutes, or until the top is golden brown and the blueberry filling is bubbly around the edges.
  • If you like a crispier topping, you can sprinkle a little extra sugar over the top before baking.
  • Cool and Serve
    Once the cobbler is done baking, let it cool for about 10 minutes. This will allow the filling to set a bit before serving.
  • Serve warm, either on its own or with a scoop of vanilla ice cream or whipped cream for an extra treat.
