Ingredients
  

  • 1 tablespoon butter
  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 cups fresh broccoli florets
  • 1 large carrot, grated
  • 4 cups chicken or vegetable broth
  • 2 cups milk3 tablespoons all-purpose flour
  • 2 cups shredded sharp cheddar cheese
  • Salt and pepper to taste
  • Optional: 1/4 teaspoon nutmeg

Instructions
 

  • Prepare the Ingredients
    Chop the onion and mince the garlic.Grate the carrot and cut the broccoli into small florets.Shred the cheddar cheese.
  • Sauté the Aromatics
    In a large pot or Dutch oven, heat the butter and olive oil over medium heat.Add the chopped onion and minced garlic, sautéing until the onion is translucent and fragrant, about 5 minutes.
  • Cook the Vegetables
    Add the grated carrot and broccoli florets to the pot.Stir and cook for about 5 minutes until the vegetables start to soften.
  • Add the Broth
    Pour in the chicken or vegetable broth.Bring the mixture to a boil, then reduce the heat and let it simmer for about 10 minutes, until the broccoli is tender.
  • Prepare the Cheese Sauce
    In a medium saucepan, heat the milk over medium heat.Whisk in the flour, stirring constantly to avoid lumps.Continue to cook, whisking frequently, until the mixture thickens, about 5 minutes.
  • Combine and Blend (if desired)
    Add the milk mixture to the large pot with the vegetables.Stir in the shredded cheddar cheese until it melts completely.For a smoother texture, use a blender or immersion blender to puree the soup to your desired consistency. You can leave some chunks if you prefer a chunkier soup.
  • Season and Serve
    Season the soup with salt, pepper, and nutmeg (if using) to taste.Ladle the soup into bowls and serve hot with a side of crusty bread.
