Ingredients
  

  • 2 pounds of beef stew meat (chuck roast or beef tips work well)
  • 1 tablespoon of vegetable oil
  • 1 medium onion, diced
  • 1 green bell pepper, diced
  • 4 cloves of garlic, minced
  • 2 medium tomatoes, diced (or 1 can of diced tomatoes)
  • 2 cups of beef broth
  • 1 tablespoon of tomato paste
  • 2 teaspoons of ground cumin
  • 1 teaspoon of chili powder
  • 1 teaspoon of paprika
  • 1 teaspoon of oregano
  • Salt and black pepper to taste
  • 2 tablespoons of all-purpose flour
  • ½ cup of water (to mix with the flour for thickening)
  • Optional: fresh cilantro and lime wedges for garnish

Instructions
 

  • Prepare the Ingredients
    Dice the onion, bell pepper, and tomatoes. Mince the garlic.
    Cut the beef into bite-sized pieces if not pre-cut.
  • Brown the Beef
    Heat the vegetable oil in a large skillet or Dutch oven over medium-high heat.
    Add the beef and brown on all sides. This step locks in the flavor. Remove the beef and set aside.
  • Sauté the Vegetables
    In the same skillet, add the diced onion, bell pepper, and garlic.
    Sauté until the vegetables are soft and fragrant, about 5 minutes.
  • Build the Sauce
    Stir in the diced tomatoes and tomato paste.
    Add the cumin, chili powder, paprika, oregano, salt, and black pepper. Mix well.
    Pour in the beef broth and bring the mixture to a simmer.
  • Combine and Simmer
    Return the browned beef to the skillet.
    Reduce the heat to low, cover, and let it simmer for 1.5 to 2 hours, stirring occasionally. The beef should become tender, and the flavors will meld together.
  • Thicken the Gravy
    In a small bowl, mix the flour with ½ cup of water to form a smooth paste.
    Gradually stir this mixture into the stew, ensuring no lumps form.
    Simmer for an additional 10-15 minutes until the sauce thickens.
  • Garnish and Serve
    Garnish with fresh cilantro and lime wedges, if desired.
    Serve hot with warm tortillas, steamed rice, or refried beans.
