Ingredients
  

For the Chicken Filling:

  • 2 large chicken breasts (about 1 pound), diced
  • 2 tablespoons olive oil
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and pepper to taste

For the Burritos:

  • 4 large flour tortillas
  • 1 cup cooked rice (white, brown, or cilantro-lime rice)
  • 1 cup black beans, drained and rinsed
  • 1 cup shredded cheddar or Mexican blend cheese
  • 1 cup shredded lettuce
  • 1/2 cup diced tomatoes
  • 1/4 cup chopped cilantro (optional)
  • 1/4 cup sour cream or Greek yogurt (optional)
  • 1/4 cup salsa or hot sauce (optional)

Instructions
 

  • Prepare the Chicken:
    Dice the chicken breasts into bite-sized pieces.
    In a medium mixing bowl, combine the chili powder, cumin, smoked paprika, garlic powder, onion powder, salt, and pepper. Toss the chicken pieces in the seasoning mix until evenly coated.
  • Cook the Chicken:
    Heat 2 tablespoons of olive oil in a nonstick skillet over medium heat.
    Add the seasoned chicken to the skillet and cook for 7-10 minutes, stirring occasionally, until the chicken is cooked through and golden brown. Set aside.
  • Warm the Tortillas:
    Heat each tortilla in a dry skillet or microwave for a few seconds until soft and pliable. This makes them easier to fold without tearing.
  • Assemble the Burritos:
    Lay a tortilla flat on a clean surface.
    Layer the ingredients: start with a portion of cooked rice, followed by black beans, chicken, shredded cheese, lettuce, and diced tomatoes.
  • Add optional toppings like cilantro, sour cream, or salsa if desired.
  • Wrap the Burritos:
    Fold the sides of the tortilla inward, then roll it up tightly from the bottom to the top. Ensure the filling is secure inside.
    Repeat the process with the remaining tortillas and fillings.
  • Serve and Enjoy:
    Serve the burritos immediately as is or lightly toast them in a skillet for a crispy exterior.
    For on-the-go meals, wrap each burrito in aluminum foil for easy portability.
