Ingredients
  

For the Sauce:

  • 3 tablespoons soy sauce
  • 2 tablespoons oyster sauce
  • 1 tablespoon hoisin sauce
  • 1 teaspoon sesame oil
  • 1 tablespoon cornstarch mixed with 2 tablespoons water

For the Noodles:

  • 8 ounces (225 grams) Chow Mein or egg noodles

For the Stir-Fry:

  • 2 tablespoons vegetable oil
  • 2 boneless, skinless chicken breasts, thinly sliced
  • 1 cup shredded cabbage
  • 1 medium carrot, julienned
  • 1 bell pepper (red or green), thinly sliced
  • 1/2 cup bean sprouts
  • 3 green onions, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon grated ginger
  • Salt and pepper to taste

Instructions
 

  • Step 1: Prepare the Noodles
    Bring a large pot of water to a boil. Add the Chow Mein noodles and cook according to the package instructions (typically 3-4 minutes).
    Drain the noodles and rinse with cold water to stop the cooking process. Toss them with a little sesame oil to prevent sticking.
  • Step 2: Make the Sauce
    In a small bowl, whisk together soy sauce, oyster sauce, hoisin sauce, sesame oil, and the cornstarch slurry.
    Set the sauce aside.
  • Step 3: Cook the Chicken
    Heat 1 tablespoon of vegetable oil in a wok or skillet over medium-high heat.
    Add the chicken slices, season with salt and pepper, and stir-fry for 5-7 minutes until fully cooked and lightly browned.
    Remove the chicken from the wok and set aside.
  • Step 4: Stir-Fry the Vegetables
    In the same wok, add another tablespoon of vegetable oil.
    Stir-fry the garlic and ginger until fragrant (about 30 seconds).
    Add the cabbage, carrot, bell pepper, and bean sprouts. Stir-fry for 3-4 minutes until the vegetables are slightly tender but still crisp.
  • Step 5: Combine Everything
    Return the cooked chicken to the wok with the vegetables.
    Add the cooked noodles and pour the sauce over the top.
    Toss everything together with tongs or a spatula, ensuring the sauce coats the noodles evenly.
    Stir-fry for an additional 2-3 minutes until heated through.
  • Step 6: Serve
    Garnish with chopped green onions.
    Serve hot and enjoy your homemade Chicken Chow Mein!
