- 1 pound of chicken breast, thinly sliced
- 3 bell peppers (assorted colors), thinly sliced
- 1 large onion, thinly sliced
- 3 tablespoons of olive oil
- 2 cloves of garlic, minced
- 2 teaspoons of ground cumin
- 1 teaspoon of chili powder
- Salt and pepper to taste
- 8 small flour tortillas
In a bowl, combine sliced chicken, minced garlic, cumin, chili powder, salt, and pepper. Let it marinate for at least 15 minutes.
Heat olive oil in a skillet over medium-high heat. Add sliced bell peppers and onions, sautéing until tender-crisp. Remove and set aside.
In the same skillet, cook the marinated chicken until browned and fully cooked. Reintroduce the sautéed veggies and mix until well combined.
Heat the flour tortillas in the skillet for a few seconds on each side or until warm.
