For the chicken paprikash:
- 2 tablespoons vegetable oil or butter
- 2 pounds chicken (thighs and drumsticks, skin-on for flavor)
- 1 large onion, finely chopped
- 3 garlic cloves, minced
- 2 tablespoons sweet Hungarian paprika (avoid smoked paprika for authenticity)
- 1 teaspoon hot paprika or cayenne pepper (optional, for heat)
- 1 large red bell pepper, diced
- 2 medium tomatoes, diced (or 1 cup canned diced tomatoes)
- 1 ½ cups chicken broth
- ½ cup sour cream
- 2 tablespoons all-purpose flour
- Salt and pepper to taste
For serving:
- 2 cups cooked egg noodles or rice
Prepare the Chicken:Season the chicken pieces with salt and pepper. Heat the oil or butter in a large skillet or Dutch oven over medium heat. Brown the chicken on both sides until golden (about 3–4 minutes per side). Remove the chicken and set it aside. Sauté Aromatics:In the same skillet, add the chopped onion and cook until softened, about 5 minutes. Add the minced garlic and diced red bell pepper, cooking for another 2 minutes. Add the Paprika and Tomatoes:Lower the heat and stir in the sweet paprika and optional hot paprika or cayenne. Cook for about 1 minute to release the flavors. Add the diced tomatoes and stir to combine. Simmer the Chicken:Return the browned chicken to the skillet. Pour in the chicken broth, ensuring the chicken is partially submerged. Cover and let simmer on low heat for 30 minutes, stirring occasionally. Make the Creamy Sauce:In a small bowl, mix the sour cream and flour until smooth. Slowly add a few tablespoons of the hot cooking liquid from the skillet to temper the sour cream mixture, then pour it back into the skillet. Stir well to thicken the sauce and cook for another 5–7 minutes. Serve and Enjoy:Serve your chicken paprikash over egg noodles, rice, or even mashed potatoes.
