Ingredients
  

  • 2 cups cooked chicken, shredded or cubed
  • 12 oz pasta (spaghetti, linguine, or fettuccine)
  • 1 cup sliced mushrooms
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1/4 cup unsalted butter
  • 1/4 cup all-purpose flour
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1 cup shredded mozzarella cheese
  • 1/4 cup dry white wine (optional)
  • 1/4 teaspoon ground nutmeg
  • Salt and pepper to taste
  • 1/4 cup breadcrumbs (optional)
  • 2 tablespoons chopped fresh parsley for garnish

Instructions
 

  • Bring a large pot of salted water to a boil.
  • Add the pasta and cook according to package instructions until al dente.
  • Drain the pasta and set it aside.
  • Prepare the Chicken:
    If you haven't already, cook the chicken by boiling, roasting, or using leftover rotisserie chicken.
  • Shred or cube the chicken and set it aside.
  • Sauté the Vegetables:
    In a large skillet, melt the butter over medium heat.
  • Add the chopped onion and cook until softened, about 3-4 minutes.
  • Stir in the garlic and mushrooms, cooking until the mushrooms release their moisture and begin to brown, about 5 minutes.
  • Make the Sauce:
    Sprinkle the flour over the sautéed vegetables and stir to combine. Cook for 1-2 minutes to eliminate the raw flour taste.
  • Gradually whisk in the chicken broth, followed by the heavy cream. Continue whisking until the sauce is smooth and begins to thicken.
  • Add the dry white wine (if using), nutmeg, salt, and pepper to taste.
  • Stir in the Parmesan cheese until melted and incorporated into the sauce.
  • Combine Ingredients"
    Preheat your oven to 350°F (175°C).
  • Add the cooked chicken to the skillet with the sauce, stirring to coat the chicken evenly.
  • Add the cooked pasta to the skillet and toss everything together until the pasta is fully coated in the sauce.
  • Assemble and Bake:
    Transfer the chicken and pasta mixture to a greased 9x13-inch baking dish.
  • Sprinkle the shredded mozzarella cheese evenly over the top.
  • If you like a crispy topping, sprinkle breadcrumbs over the cheese.
  • Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly.
  • Garnish and Serve:
    Remove the Chicken Tetrazzini from the oven and let it cool slightly.
  • Garnish with chopped fresh parsley before serving.
  • Serve warm and enjoy!
