Ingredients
  

  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 3 garlic cloves, minced
  • 1 lb (450g) ground beef or turkey
  • 2 cups uncooked elbow macaroni
  • 2 cups beef or chicken broth
  • 1 can (15 oz) diced tomatoes
  • 1 can (15 oz) kidney or black beans, drained and rinsed
  • 1 cup tomato sauce
  • 2 tablespoons chili powder
  • 1 teaspoon cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon salt (or to taste)
  • ½ teaspoon black pepper
  • 1 cup shredded cheddar cheese (plus extra for garnish)
  • Fresh parsley or green onions for garnish (optional)

Instructions
 

  • Sauté Aromatics
    Heat the olive oil in a large pot or Dutch oven over medium heat.
  • Add the diced onion and sauté for 3-4 minutes until softened.
  • Stir in the minced garlic and cook for another minute, until fragrant.
  • Cook the Meat
    Add the ground beef or turkey to the pot. Use a wooden spoon to break it into smaller pieces as it cooks.
  • Season the meat with a pinch of salt and pepper. Cook until browned, about 5-7 minutes. Drain any excess fat if necessary.
  • Add Liquids and Seasonings
    Stir in the chili powder, cumin, and smoked paprika, letting the spices bloom for about 30 seconds.
  • Add the diced tomatoes, tomato sauce, beans, broth, and uncooked macaroni. Mix well.
  • Simmer the Chili Mac
    Bring the mixture to a gentle boil, then reduce the heat to low. Cover and simmer for 12-15 minutes, stirring occasionally, until the macaroni is tender.
  • Add Cheese
    Remove the pot from the heat and stir in the shredded cheddar cheese until melted and creamy.
  • Serve and Enjoy
    Spoon the Chili Mac into bowls and garnish with extra cheese, parsley, or green onions if desired. Serve warm.
