Chinese Sticky Rice Recipe

Chinese Sticky Rice has deep roots in Chinese culinary tradition, dating back centuries. Glutinous rice, the key ingredient, has been a staple in East Asian cuisine for over 2,000 years. Traditionally, sticky rice dishes were reserved for special occasions such as Lunar New Year, weddings, or temple offerings.

Equipment

Ingredients
  

  • 2 cups glutinous rice (also called sticky rice)
  • 1/2 lb chicken thigh or pork, diced
  • 1/2 cup shiitake mushrooms, rehydrated and sliced
  • 1/4 cup dried shrimp, rehydrated
  • 2 Chinese sausages (lap cheong), thinly sliced
  • 2 tbsp soy sauce
  • 1 tbsp oyster sauce
  • 1 tbsp dark soy sauce (for color)
  • 1 tbsp sesame oil
  • 1 tsp sugar
  • 1/2 tsp white pepper
  • 1 tbsp cooking oil

Garnishes (Optional):

  • 2 tbsp chopped scallions
  • 1 tsp fried shallots

Instructions
 

  • Prepare the Ingredients
    Rinse the rice: Wash the glutinous rice under cold water until the water runs clear. Soak it in water for 3–4 hours or overnight. Drain before cooking.
  • Soak dried ingredients: Rehydrate shiitake mushrooms and dried shrimp in warm water for about 20 minutes. Slice the mushrooms thinly.
  • Cook the Rice
    In a rice cooker or steamer, cook the glutinous rice with a 1:1 ratio of water (2 cups rice to 2 cups water). If using a pot, bring the rice to a boil, then reduce the heat and simmer covered for about 20 minutes.
  • Prepare the Filling
    Heat 1 tbsp of cooking oil in a wok over medium heat. Add the diced chicken or pork and stir-fry until browned.
  • Toss in the Chinese sausage, shiitake mushrooms, and dried shrimp. Stir-fry for 3–4 minutes.
  • Add soy sauce, oyster sauce, dark soy sauce, sesame oil, sugar, and white pepper. Stir well to coat the ingredients evenly.
  • Combine the Rice and Filling
    Once the rice is cooked, transfer it to the wok with the filling. Mix thoroughly to ensure the flavors are evenly distributed. Adjust seasonings if needed.
  • Serve and Garnish
    Serve warm, garnished with chopped scallions and fried shallots for an extra layer of flavor and crunch.
