Ingredients
  

Crust

  • 1 1/2 cups of crushed graham crackers (or Oreo cookies if you want a chocolate crust)
  • 1/3 cup of granulated sugar
  • 6 tablespoons of melted unsalted butter

Chocolate Filling

  • 1 cup granulated sugar
  • 1/4 cup cornstarch
  • 1/4 teaspoon salt
  • 3 cups whole milk
  • 4 large egg yolks
  • 6 ounces bittersweet chocolate, chopped
  • 2 tablespoons unsalted butter
  • 1 teaspoon vanilla extract

Whipped

  • Topping
  • 1 cup heavy cream
  • 2 tablespoons powdered sugar
  • 1/2 teaspoon vanilla extract
  • Optional garnish: chocolate shavings or cocoa powder

Instructions
 

  • Prepare the Crust
    Mix the crust ingredients: In a medium bowl, combine crushed graham crackers or Oreo crumbs, sugar, and melted butter. Stir until the mixture resembles damp sand.
  • Press into the pie pan: Pour the mixture into your pie pan and press it evenly across the bottom and up the sides, using a measuring cup to flatten it.
  • Bake (optional): If you prefer a firmer crust, bake it at 350°F (175°C) for 8-10 minutes. Allow it to cool while preparing the filling.
  • Make the Chocolate Filling
    Combine dry ingredients: In a medium saucepan, whisk together the sugar, cornstarch, and salt.
  • Add milk and heat: Gradually pour in the milk while whisking to prevent lumps. Cook over medium heat, stirring constantly, until the mixture starts to thicken (about 5-7 minutes).
  • Temper the egg yolks: In a separate bowl, lightly beat the egg yolks. Slowly add a ladle of the hot milk mixture to the yolks, whisking constantly. This prevents the eggs from scrambling.
  • Finish cooking the filling: Pour the egg yolk mixture back into the saucepan and cook for another 2-3 minutes, stirring continuously, until thick and bubbly.
  • Add chocolate and flavoring: Remove the saucepan from heat and stir in chopped chocolate, butter, and vanilla extract. Stir until the chocolate and butter are fully melted and the filling is smooth.
  • Cool the filling: Pour the filling into the prepared crust and cover with plastic wrap, pressing it directly onto the surface of the filling to prevent a skin from forming. Chill in the refrigerator for at least 2 hours.
  • Whip the Cream Topping
    Make whipped cream: In a mixing bowl, combine heavy cream, powdered sugar, and vanilla extract. Beat on high speed until soft peaks form.
  • Spread the topping: Once the pie is thoroughly chilled, spread the whipped cream over the chocolate filling.
  • Garnish (optional): Sprinkle chocolate shavings or dust a little cocoa powder over the whipped cream for extra appeal.
