- 3 large eggs, separated
- 3 tablespoons cream cheese (softened) or Greek yogurt
- 1/4 teaspoon cream of tartar
- 1 tablespoon sweetener (optional, for a sweeter version)
- A pinch of salt (optional, for savory versions)
- Prepare the IngredientsPreheat your oven to 300°F (150°C). Line a baking sheet with parchment paper or a silicone baking mat to prevent sticking.
- Separate the egg whites from the yolks into two different mixing bowls.
- Whip the Egg WhitesAdd the cream of tartar to the bowl with the egg whites.
- Using a hand mixer or stand mixer, whip the egg whites on high speed until stiff peaks form. This will give the cloud bread its airy texture.
- Mix the YolksIn the other bowl, mix the egg yolks with the softened cream cheese or Greek yogurt. Add sweetener or salt, depending on your preference.
- Stir until the mixture is smooth and creamy.
- Fold the MixturesGently fold the whipped egg whites into the yolk mixture using a spatula. Be careful not to overmix, as this can deflate the batter. You should end up with a light, fluffy mixture.
- Shape and BakeScoop the mixture onto the prepared baking sheet, forming 6 even mounds. Use the back of a spoon to shape them into circles about 1/2 inch thick.
- Bake for 25 minutes or until the tops are golden brown.
- Cool and EnjoyRemove the cloud bread from the oven and let it cool on the baking sheet for 10 minutes.
- Serve immediately or store in an airtight container in the fridge for up to 3 days.
