Equipment

  • Mixing bowls (2)
  • Hand mixer or stand mixer
  • Baking sheet
  • Parchment paper or silicone baking mat
  • Spatula

Ingredients

  • 3 large eggs, separated
  • 3 tablespoons cream cheese (softened) or Greek yogurt
  • 1/4 teaspoon cream of tartar
  • 1 tablespoon sweetener (optional, for a sweeter version)
  • A pinch of salt (optional, for savory versions)

Instructions

  • Prepare the Ingredients
Preheat your oven to 300°F (150°C). Line a baking sheet with parchment paper or a silicone baking mat to prevent sticking.
  • Separate the egg whites from the yolks into two different mixing bowls.
  • Whip the Egg Whites
Add the cream of tartar to the bowl with the egg whites.
  • Using a hand mixer or stand mixer, whip the egg whites on high speed until stiff peaks form. This will give the cloud bread its airy texture.
  • Mix the Yolks
In the other bowl, mix the egg yolks with the softened cream cheese or Greek yogurt. Add sweetener or salt, depending on your preference.
  • Stir until the mixture is smooth and creamy.
  • Fold the Mixtures
Gently fold the whipped egg whites into the yolk mixture using a spatula. Be careful not to overmix, as this can deflate the batter. You should end up with a light, fluffy mixture.
  • Shape and Bake
Scoop the mixture onto the prepared baking sheet, forming 6 even mounds. Use the back of a spoon to shape them into circles about 1/2 inch thick.
  • Bake for 25 minutes or until the tops are golden brown.
  • Cool and Enjoy
Remove the cloud bread from the oven and let it cool on the baking sheet for 10 minutes.
  • Serve immediately or store in an airtight container in the fridge for up to 3 days.
