Ingredients
  

  • 1 cup (240g) unsalted butter, softened
  • 1 cup (200g) granulated sugar
  • 1/2 cup (100g) brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups (250 g) all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 cups (160g) desiccated coconut
  • 1/2 cup (120g) shredded sweetened coconut (optional, for garnish)

Instructions
 

  • Step 1: Preheat Your Oven
    Preheat your oven to 350°F (175°C). Line your baking sheets with parchment paper to prevent sticking and ensure easy cleanup.
  • Step 2: Cream the Butter and Sugars
    In a large mixing bowl, use a hand mixer or stand mixer to cream together the softened butter, granulated sugar, and brown sugar until light and fluffy. This should take about 2-3 minutes.
  • Step 3: Add the Wet Ingredients
    Beat in the eggs one at a time, ensuring each egg is fully incorporated before adding the next. Then, mix in the vanilla extract.
  • Step 4: Mix the Dry Ingredients
    In a separate bowl, whisk together the flour, baking powder, baking soda, and salt. Gradually add the dry ingredients to the wet mixture, mixing on low speed until just combined.
  • Step 5: Fold in the Coconut
    Using a spatula, gently fold in the desiccated coconut. If you prefer a more intense coconut flavor, you can add an additional 1/4 cup of shredded sweetened coconut.
  • Step 6: Shape the Cookies
    Using a tablespoon or a small cookie scoop, drop dough balls onto the prepared baking sheets, spacing them about 2 inches apart.
  • Step 7: Bake the Cookies
    Bake in the preheated oven for 12-15 minutes, or until the edges are lightly golden. The centers may appear slightly undercooked but will firm up as they cool.
  • Step 8: Cool and Enjoy
