Ingredients
  

For the Meatloaf:

  • 2 pounds ground beef (preferably 80/20 lean-to-fat ratio)
  • 1 cup crushed Ritz crackers or breadcrumbs
  • 2 large eggs
  • 1/2 cup finely diced onions
  • 1/4 cup finely diced green bell peppers
  • 1/4 cup finely diced red bell peppers
  • 1/2 cup whole milk
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder

For the Glaze:

  • 1/2 cup ketchup
  • 1/4 cup brown sugar
  • 1 teaspoon yellow mustard

Instructions
 

  • Preheat Your Oven
    Preheat your oven to 350°F (175°C). This ensures even cooking and perfect texture for your meatloaf.
  • Mix the Ingredients
    In a large mixing bowl, combine the ground beef, crushed Ritz crackers, eggs, onions, bell peppers, milk, Worcestershire sauce, salt, black pepper, and garlic powder. Use clean hands or a spoon to gently mix until just combined. Avoid overmixing, as it can make the meatloaf dense
  • Shape and Transfer to Loaf Pan
    Transfer the meat mixture into a greased loaf pan and press it down gently to ensure it's evenly packed. Smooth the top for a uniform appearance.
  • Prepare the Glaze
    In a medium bowl, whisk together the ketchup, brown sugar, and mustard. Spread half of the glaze over the top of the meatloaf, reserving the rest for later.
  • Bake the Meatloaf
    Cover the loaf pan with aluminum foil and bake in the preheated oven for 40 minutes.
  • Add More Glaze
    Remove the foil, spread the remaining glaze over the meatloaf, and bake uncovered for an additional 15-20 minutes, or until the internal temperature reaches 160°F (70°C).
  • Rest and Serve
    Let the meatloaf rest in the pan for 5-10 minutes before slicing. This helps the juices redistribute, ensuring every bite is moist and flavorful.
