Ingredients
  

  • 2 cups of fresh corn kernels (or canned corn)
  • 3 tablespoons of butter
  • 3 tablespoons of all-purpose flour
  • 1 cup of milk
  • 4 large eggs, separated
  • Salt and pepper to taste
  • Optional: Grated cheese for extra richness

Instructions
 

  • Preheat your oven to 375°F (190°C) and grease a baking dish.
  • In a bowl, combine cornmeal, milk, melted butter, egg yolks, baking powder, salt, and black pepper. Mix until well combined.
  • In a separate bowl, beat the egg whites until stiff peaks form.
  • Gently fold the beaten egg whites into the cornmeal mixture until just combined.
  • Stir in the corn kernels and optional shredded cheese.
  • Pour the mixture into the greased baking dish.
  • Bake for 30-35 minutes or until the top is golden brown and the center is set.
