In a bowl, combine cornmeal, milk, melted butter, egg yolks, baking powder, salt, and black pepper. Mix until well combined.
In a separate bowl, beat the egg whites until stiff peaks form.
Gently fold the beaten egg whites into the cornmeal mixture until just combined.
Stir in the corn kernels and optional shredded cheese.
Pour the mixture into the greased baking dish.
Bake for 30-35 minutes or until the top is golden brown and the center is set.
