Ingredients
  

  • 2 cups cooked corned beef, diced (leftover or canned)
  • 2 cups potatoes, diced (Yukon gold or russet are ideal)
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced (optional, for extra flavor)
  • 2-3 tablespoons butter or olive oil
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)
  • Eggs (optional, for serving)

Instructions
 

  • Prepare the Ingredients
    Dice the corned beef and potatoes into small, even cubes. Finely chop the onion and mince the garlic (if using).
  • Cook the Potatoes
    In a large skillet over medium-high heat, add 1 tablespoon of butter or oil. Once hot, add the potatoes in a single layer.
  • Cook them for 7-8 minutes, stirring occasionally, until they’re golden brown and crispy. Remove from the skillet and set aside.
  • Sauté the Onion and Garlic
    Add another tablespoon of butter or oil to the skillet. Add the chopped onion and cook for 3-4 minutes until softened.
  • Add the minced garlic and cook for an additional minute, being careful not to burn it.
  • Combine Corned Beef and Potatoes
    Add the cooked potatoes back to the skillet, followed by the diced corned beef. Stir everything together and press the mixture into the skillet with a spatula to create a flat layer. Allow the hash to cook undisturbed for 4-5 minutes to form a crispy bottom layer.
  • Season and Finish Cooking
    Season with salt and pepper to taste. Stir and cook for another 2-3 minutes, letting everything crisp up nicely.
  • Add Eggs (Optional)
    For an extra protein boost, crack a few eggs on top of the hash in the skillet. Cover the skillet with a lid and cook until the eggs reach your desired doneness.
  • Garnish and Serve
    Garnish with chopped parsley and serve hot. Corned beef hash pairs well with toast or fresh fruit on the side.
