Ingredients
  

  • 3-4 pounds beef chuck roast
  • 1 onion, chopped
  • 3-4 carrots, peeled and chopped
  • 3-4 potatoes, peeled and cubed
  • 2 cups beef broth
  • 1/4 cup soy sauce
  • 2 tablespoons Worcestershire sauce
  • 2 teaspoons garlic powder
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 2 tablespoons cornstarch (optional, for thickening gravy)

Instructions
 

  • Season the beef roast with salt, pepper, and garlic powder.Heat a large skillet over medium-high heat and sear the roast on all sides until browned.
  • Place the chopped onion, carrots, and potatoes in the bottom of the crock pot.
  • Transfer the seared roast to the crock pot on top of the vegetables. In a bowl, mix together beef broth, soy sauce, Worcestershire sauce, thyme, and garlic powder. Pour over the roast and vegetables in the crock pot.
  • Cover and cook on low for 8-10 hours or on high for 4-6 hours, until the meat is tender and easily falls apart.
  • Optional: To thicken the gravy, mix cornstarch with a bit of water to create a slurry. Stir into the crock pot during the last 30 minutes of cooking.
  • Once cooked, remove the roast and vegetables from the crock pot and let rest before slicing.
  • Serve the roast with the vegetables and gravy on the side.
