- 3-4 pounds beef chuck roast
- 1 onion, chopped
- 3-4 carrots, peeled and chopped
- 3-4 potatoes, peeled and cubed
- 2 cups beef broth
- 1/4 cup soy sauce
- 2 tablespoons Worcestershire sauce
- 2 teaspoons garlic powder
- 1 teaspoon dried thyme
- Salt and pepper to taste
- 2 tablespoons cornstarch (optional, for thickening gravy)
Season the beef roast with salt, pepper, and garlic powder.Heat a large skillet over medium-high heat and sear the roast on all sides until browned.
Place the chopped onion, carrots, and potatoes in the bottom of the crock pot.
Transfer the seared roast to the crock pot on top of the vegetables. In a bowl, mix together beef broth, soy sauce, Worcestershire sauce, thyme, and garlic powder. Pour over the roast and vegetables in the crock pot.
Cover and cook on low for 8-10 hours or on high for 4-6 hours, until the meat is tender and easily falls apart.
Optional: To thicken the gravy, mix cornstarch with a bit of water to create a slurry. Stir into the crock pot during the last 30 minutes of cooking.
Once cooked, remove the roast and vegetables from the crock pot and let rest before slicing.
Serve the roast with the vegetables and gravy on the side.
