Blondies, often referred to as "blonde brownies," are a vanilla-based cousin of the chocolate brownie. They date back to the early 20th century and became popular as a dessert option for those who preferred the flavor of brown sugar over cocoa.

Ingredients
  

For the Blondies:

  • 1 cup unsalted butter, melted
  • 1 cup brown sugar, packed
  • ½ cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • ¼ tsp almond extract (optional)
  • 2 cups all-purpose flour
  • ½ tsp baking powder
  • ¼ tsp baking soda
  • ½ tsp salt
  • 1 tsp ground cinnamon
  • ½ tsp cayenne pepper (adjust to taste)
  • 1 cup white chocolate chips

Optional Topping:

  • A sprinkle of chili powder
  • Drizzle of melted white chocolate

Instructions
 

  • Preheat and Prepare the Pan:Preheat your oven to 350°F (175°C). Line a 9x9-inch baking pan with parchment paper, leaving some overhang for easy removal.
  • Mix the Wet Ingredients:In a large mixing bowl, whisk together the melted butter, brown sugar, and granulated sugar until smooth and creamy. Add the eggs, vanilla extract, and almond extract (if using). Whisk until fully combined.
  • Combine the Dry Ingredients:In a medium mixing bowl, sift together the flour, baking powder, baking soda, salt, cinnamon, and cayenne pepper.
  • Bring It All Together:Gradually fold the dry ingredients into the wet mixture using a spatula. Mix until just combined, being careful not to overmix. Fold in the white chocolate chips.
  • Transfer to the Pan:Pour the batter into the prepared baking pan and spread it evenly using the spatula.
  • Bake to Perfection:Place the pan in the oven and bake for 25-30 minutes, or until the edges are golden and a toothpick inserted in the center comes out with a few moist crumbs.
  • Cool and Decorate:Allow the blondies to cool completely in the pan before lifting them out using the parchment paper. Optional: Drizzle melted white chocolate over the top and sprinkle with a pinch of chili powder for extra flair.
  • Slice and Serve:Cut the blondies into 16 squares and serve. Enjoy the sweet, spicy kick!
