- 2 cups Jasmine rice, cooked and cooled
- 1 cup diced chicken or tofu for a vegetarian option
- 1/2 cup shrimp, peeled and deveined
- 1 cup mixed vegetables (peas, carrots, corn)3 eggs, beaten
- 4 green onions, finely chopped
- 3 cloves garlic, minced
- 1/4 cup soy sauce
- 1 tablespoon oyster sauce
- 1 teaspoon sesame oil
- Salt and pepper to taste
Heat oil in the wok over medium-high heat.
Add garlic and sauté until aromatic.
Add diced chicken (or tofu) and shrimp, cook until browned.
Push the meat to the side, pour beaten eggs into the wok, and scramble.
Stir in mixed vegetables and cook until tender.
Add cooked rice, soy sauce, oyster sauce, and sesame oil. Mix thoroughly.
Toss in chopped green onions and season with salt and pepper to taste.
Continue to stir-fry until everything is well combined and heated through.
