In a mixing bowl, combine the olive oil, garlic powder, onion powder, smoked paprika, oregano, salt, black pepper, cayenne pepper (if using), and lemon juice. Mix well to create a marinade.
Add the chicken drumsticks to the bowl, ensuring they are fully coated in the marinade. Cover the bowl with plastic wrap and refrigerate for at least 30 minutes. If time allows, marinating for a few hours or overnight will enhance the flavor.
Preheat your oven to 400°F (200°C). This temperature is ideal for achieving crispy skin while ensuring the meat remains juicy.
Line a baking tray with parchment paper for easy cleanup. If you don’t have parchment paper, greasing the tray lightly with oil will work as well.
Remove the drumsticks from the marinade and place them on the prepared baking tray. Make sure they are spaced apart to allow for even cooking.
Bake in the preheated oven for 40-45 minutes, turning them halfway through. The drumsticks are done when they reach an internal temperature of 165°F (75°C) and the skin is crispy.
Once cooked, remove the drumsticks from the oven and let them rest for about 5 minutes. Serve with your favorite sides, such as mashed potatoes, coleslaw, or a fresh salad.
