Silicone egg bite molds or muffin tin
Sous vide machine or oven
- 4 large eggs
- 1/2 cup shredded cheese (cheddar, mozzarella, or your favorite)
- 1/4 cup diced vegetables (bell peppers, spinach, onions, etc.)
- 1/4 cup cooked and crumbled bacon or ham (optional)
- Salt and pepper to taste
- Non-stick cooking spray or olive oil for greasing
Preheat your oven to 375°F (190°C) or prepare your sous vide machine according to manufacturer instructions.
In a blender or food processor, combine eggs, cheese, diced vegetables, cooked meat (if using), salt, and pepper. Blend until smooth.
Grease the silicone egg bite molds or muffin tin with cooking spray or olive oil.
Pour the egg mixture evenly into the molds, filling each about 3/4 full.
Place the molds on a baking sheet and bake in the preheated oven for 15-20 minutes or until the egg bites are set and slightly golden on top. If using a sous vide machine, cook the egg bites at 172°F (77.8°C) for 60 minutes.
Once cooked, remove the egg bites from the oven or sous vide machine and let them cool for a few minutes before serving.
Gently remove the egg bites from the molds and serve warm.
