Ingredients
  

  • 1 lb ground pork (can substitute with ground turkey or chicken)
  • 1 small onion, diced
  • 2-3 garlic cloves, minced
  • 1 tablespoon ginger, freshly grated or minced
  • 1 small green cabbage, shredded (or use a pre-shredded coleslaw mix)
  • 1 large carrot, julienned or grated
  • 2 tablespoons soy sauce (or coconut aminos for a gluten-free option)
  • 1 tablespoon sesame oil
  • 1 tablespoon rice vinegar
  • 1 teaspoon sriracha (optional, for heat)
  • 2 green onions, sliced (for garnish)
  • Sesame seeds (optional, for garnish)
  • Salt and pepper, to taste

Instructions
 

  • Prepare Your Ingredients
    Dice the onion, mince the garlic and ginger, shred the cabbage, and julienne or grate the carrot.
    Have the soy sauce, sesame oil, rice vinegar, and sriracha ready to use.
  • Cook the Meat
    Heat a large skillet or wok over medium heat. Add the ground pork and cook until browned, breaking it up into small pieces with a spatula. Drain any excess fat if necessary.
    Season lightly with salt and pepper.
  • Sauté Aromatics
    Push the cooked meat to one side of the skillet. Add the diced onion, minced garlic, and ginger to the empty side of the pan. Cook for 2-3 minutes, stirring, until fragrant.
  • Add the Vegetables
    Mix the onion, garlic, and ginger into the cooked meat. Add the shredded cabbage and carrot to the skillet.
    Stir-fry everything for 5-7 minutes, or until the vegetables are tender but still slightly crisp.
  • Add Seasonings
    Pour in the soy sauce, sesame oil, rice vinegar, and sriracha (if using). Toss everything together to ensure the meat and vegetables are evenly coated.
    Taste and adjust seasonings as needed.
  • Garnish and Serve
    Turn off the heat. Sprinkle sliced green onions and sesame seeds over the dish for garnish.
    Serve immediately in bowls. This dish pairs well with steamed rice or cauliflower rice if you prefer a heartier meal.
