- 1/4 cup mayonnaise
- 1 tablespoon Dijon mustard
- 1 tablespoon fresh lemon juice
- 1/4 cup finely chopped celery
- 2 tablespoons finely chopped red onion
- Salt and pepper to taste
- 8 slices of bread (whole wheat, white, or your preference)
- Lettuce leaves (optional)

Boil the Eggs:Place the eggs in a medium saucepan and cover them with cold water.Bring the water to a boil over medium-high heat. Once boiling, cover the saucepan and remove it from the heat. Let the eggs sit in hot water for 12 minutes. After 12 minutes, transfer the eggs to a bowl of ice water to cool. Once cooled, peel the eggs and set them aside.
Prepare the Egg Salad:Chop the hard-boiled eggs into small pieces and place them in a mixing bowl. Add the mayonnaise, Dijon mustard, and fresh lemon juice to the bowl. Mix well to combine.Stir in the finely chopped celery and red onion. Add salt and pepper to taste.
