Ingredients
  

  • 2 cans of chickpeas (drained and rinsed)
  • 1 small onion, roughly chopped
  • 3 cloves of garlic
  • A handful of fresh parsley
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon cayenne pepper (adjust to taste)Salt and pepper to taste
  • 2 tablespoons all-purpose flour
  • 1 teaspoon baking powder
  • Cooking oil for frying

Instructions
 

  • In a food processor, combine chickpeas, onion, garlic, parsley, cumin, coriander, cayenne pepper, salt, and pepper. Blend until a coarse paste forms.
  • Transfer the mixture to a bowl, add flour and baking powder, and mix well.
  • Form the mixture into small patties, about 1.5 inches in diameter.
  • Heat oil in a frying pan over medium heat.
  • Fry falafels until golden brown and crispy on both sides. This usually takes about 3-4 minutes per side.
  • Place falafels on paper towels to absorb excess oil.
