Ingredients
  

  • 2 medium zucchinis - sliced into 1/4-inch rounds
  • 1 cup all-purpose flour - for dredging
  • 2 large eggs - beaten
  • 1 cup breadcrumbs - plain or seasoned, as preferred
  • 1/2 cup grated Parmesan cheese - optional for extra flavor
  • Salt and pepper - to taste
  • 1/2 teaspoon garlic powder - optional, for extra flavor
  • Vegetable or olive oil - for frying
  • Optional sauces: Marinara, ranch, or aioli for dipping

Instructions
 

  • Prepare the Zucchini
    Start by washing the zucchinis thoroughly. Pat them dry with a towel and slice them into rounds about 1/4-inch thick. A consistent thickness will help them cook evenly.
  • Season the Flour and Breadcrumbs
    In separate shallow bowls, prepare your dredging stations:
    Bowl 1: Add flour and a pinch of salt and pepper. Stir to combine.
    Bowl 2: Beat two eggs in a bowl until smooth.
    Bowl 3: Mix breadcrumbs with grated Parmesan, garlic powder (if using), salt, and pepper.
  • Dredge the Zucchini
    Take each zucchini slice and coat it in the flour, shaking off any excess. Next, dip it in the beaten egg, allowing any extra to drip off. Finally, press it into the breadcrumb mixture, making sure it’s fully coated on both sides.
  • Heat the Oil
    In a large frying pan, pour enough oil to cover the bottom (about 1/4-inch deep) and heat over medium heat. Test if the oil is ready by dropping a breadcrumb in; if it sizzles, it’s ready for frying.
  • Fry the Zucchini
    Place the coated zucchini slices in the pan, ensuring they are not crowded. Fry for about 2-3 minutes on each side or until they turn golden brown. Adjust the heat as needed to prevent burning.
  • Drain and Season
    Once they’re golden and crispy, remove the zucchini slices with tongs and place them on a paper towel-lined plate to drain any excess oil. Lightly sprinkle with extra salt if desired.
  • Serve and Enjoy!
    Arrange the fried zucchini on a serving plate with your choice of dipping sauces. Serve while hot to enjoy the full crispy texture!
