- 2 pounds of potatoes (about 4-5 medium potatoes)
- 1 can (10.5 ounces) cream of chicken soup
- 1 cup sour cream
- 1/2 cup melted butter
- 1/2 cup chopped onion
- 2 cups shredded cheddar cheese
- 1 cup crushed cornflakes or breadcrumbs
- Salt and pepper to taste
Set the oven temperature to 350°F (175°C). Butter a 9 x 13-inch baking pan. Potatoes should be peeled and cut into small bits.
Combine the sour cream, melted butter, chopped onion, half of the shredded cheddar cheese, and cream of chicken soup in a big bowl.
Stir the cubed potatoes into the mixture until well mixed. To taste, add salt and pepper for seasoning.
Place the potato mixture in the baking dish that has been oiled. Evenly distribute the leftover shredded cheddar cheese on top.
Sprinkle the breadcrumbs or broken cornflakes over the cheese layer after tossing it in a different bowl with a little melted butter.
Bake the baking dish for forty-five minutes with the foil covering it. Once the foil is removed, bake for a further fifteen minutes.
Remove from the oven and let it cool slightly before serving.
