Ingredients
  

  • 2 pounds of potatoes (about 4-5 medium potatoes)
  • 1 can (10.5 ounces) cream of chicken soup
  • 1 cup sour cream
  • 1/2 cup melted butter
  • 1/2 cup chopped onion
  • 2 cups shredded cheddar cheese
  • 1 cup crushed cornflakes or breadcrumbs
  • Salt and pepper to taste

Instructions
 

  • Set the oven temperature to 350°F (175°C). Butter a 9 x 13-inch baking pan. Potatoes should be peeled and cut into small bits.
  • Combine the sour cream, melted butter, chopped onion, half of the shredded cheddar cheese, and cream of chicken soup in a big bowl.
  • Stir the cubed potatoes into the mixture until well mixed. To taste, add salt and pepper for seasoning.
  • Place the potato mixture in the baking dish that has been oiled. Evenly distribute the leftover shredded cheddar cheese on top.
  • Sprinkle the breadcrumbs or broken cornflakes over the cheese layer after tossing it in a different bowl with a little melted butter.
  • Bake the baking dish for forty-five minutes with the foil covering it. Once the foil is removed, bake for a further fifteen minutes.
  • Remove from the oven and let it cool slightly before serving.
