  • 3 tablespoons olive oil (or melted butter for extra richness)
  • 4 garlic cloves, minced
  • 1 teaspoon dried thyme (optional)
  • 1 teaspoon dried rosemary (optional)
  • ½ teaspoon paprika (optional for color and flavor)
  • Salt and pepper, to taste
  • 2 tablespoons chopped fresh parsley (for garnish)

Instructions
 

  • Step 1: Preheat Your Oven
    Start by preheating your oven to 400°F (200°C). If you’re using a convection oven, 375°F (190°C) works best to ensure even cooking.
  • Step 2: Prepare the Potatoes
    Wash the potatoes thoroughly and pat them dry. If using baby potatoes, you can leave them whole or cut them in half for quicker cooking. For larger potatoes, dice them into bite-sized chunks.
  • Step 3: Season the Potatoes
    In a mixing bowl, combine the olive oil, minced garlic, dried thyme, rosemary, paprika, salt, and pepper. Add the potatoes to the bowl and toss until they are evenly coated with the seasoning mixture.
  • Step 4: Arrange on a Baking Tray
    Line your baking tray with parchment paper for easy cleanup. Spread the seasoned potatoes in a single layer, ensuring they have enough space to roast evenly. Overcrowding can lead to steaming rather than roasting.
  • Step 5: Roast the Potatoes
    Place the tray in the preheated oven and roast for 25-30 minutes. Halfway through, stir or flip the potatoes to ensure even browning. The potatoes are ready when they are golden brown and tender when pierced with a fork.
  • Step 6: Garnish and Serve
