Ingredients
  

  • 2 lbs tomatillos, husked and rinsed
  • 4 poblano peppers
  • 2 jalapeño peppers
  • 1 cup fresh cilantro, chopped
  • ½ cup pumpkin seeds
  • ¼ cup sesame seeds
  • 4 cloves garlic
  • 1 onion, chopped
  • 1 teaspoon cumin
  • 1 teaspoon coriander
  • Salt and pepper to taste
  • 2 cups chicken or vegetable broth
  • 1 cup fresh spinach leaves

Instructions
 

  • Roasting the Peppers and Tomatillos:
    Place poblano and jalapeño peppers on a baking sheet.Broil until the skin is charred, then peel and seed the peppers.Roast tomatillos in the oven until soft.
  • Prepare the Sauce:
    In a blender, combine roasted peppers, tomatillos, cilantro, pumpkin seeds, sesame seeds, garlic, onion, cumin, coriander, salt, and pepper.Blend until smooth.
  • Cooking the Mole:
    In a skillet, heat the sauce over medium heat.Add broth gradually, stirring constantly.Simmer for 15-20 minutes until the sauce thickens.Add fresh spinach and cook until wilted.
  • Serving:
    Green Mole pairs well with chicken, pork, or vegetables.Serve over rice or with warm tortillas.
