Ingredients
- 2 lbs tomatillos, husked and rinsed
- 4 poblano peppers
- 2 jalapeño peppers
- 1 cup fresh cilantro, chopped
- ½ cup pumpkin seeds
- ¼ cup sesame seeds
- 4 cloves garlic
- 1 onion, chopped
- 1 teaspoon cumin
- 1 teaspoon coriander
- Salt and pepper to taste
- 2 cups chicken or vegetable broth
- 1 cup fresh spinach leaves
Instructions
- Roasting the Peppers and Tomatillos:Place poblano and jalapeño peppers on a baking sheet.Broil until the skin is charred, then peel and seed the peppers.Roast tomatillos in the oven until soft.
- Prepare the Sauce:In a blender, combine roasted peppers, tomatillos, cilantro, pumpkin seeds, sesame seeds, garlic, onion, cumin, coriander, salt, and pepper.Blend until smooth.
- Cooking the Mole:In a skillet, heat the sauce over medium heat.Add broth gradually, stirring constantly.Simmer for 15-20 minutes until the sauce thickens.Add fresh spinach and cook until wilted.
- Serving:Green Mole pairs well with chicken, pork, or vegetables.Serve over rice or with warm tortillas.
