Shape the meat mixture into a compact loaf and place it on a baking sheet or in a loaf pan. Bake for 30–35 minutes or until fully cooked.
Once cooked, let the meat rest for 5 minutes, then slice it thinly with a sharp knife.
Make the Tzatziki SauceGrate the cucumber and squeeze out excess water using a clean kitchen towel. In a bowl, combine Greek yogurt, grated cucumber, garlic, olive oil, lemon juice, dill, and salt. Mix until smooth and creamy.

Add slices of gyro meat, lettuce, tomato, red onion, and feta cheese (if using).
Fold the sides of the pita and wrap the bottom with parchment paper or foil to secure.
