The word “gyro” comes from the Greek word for “turn,” referring to the traditional method of cooking the meat on a vertical rotisserie. Originating in Greece, gyros are believed to have been inspired by Turkish döner kebab and Middle Eastern shawarma.

Ingredients
  

For the gyro meat:

  • 1 pound (450g) ground lamb or a mix of lamb and beef
  • 2 cloves garlic, minced
  • 1 small onion, grated
  • 2 teaspoons dried oregano
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1 teaspoon ground coriander
  • ½ teaspoon salt
  • ½ teaspoon black pepper

For the tzatziki sauce:

  • 1 cup Greek yogurt
  • 1 small cucumber, finely grated
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 tablespoon lemon juice
  • 1 tablespoon fresh dill, chopped
  • A pinch of salt

For the assembly:

  • 4 pita breads
  • 1 medium tomato, sliced
  • ½ small red onion, thinly sliced
  • 1 cup shredded lettuce
  • Feta cheese (optional)

Instructions
 

  • Prepare the Gyro Meat
    Preheat your oven to 350°F (175°C).
  • In a bowl, combine the ground lamb (or beef/lamb mix), minced garlic, grated onion, and spices. Mix well until the ingredients are evenly incorporated.
  • Transfer the mixture to a food processor (optional) and blend for a smoother texture.
  • Shape the meat mixture into a compact loaf and place it on a baking sheet or in a loaf pan. Bake for 30–35 minutes or until fully cooked.
  • Once cooked, let the meat rest for 5 minutes, then slice it thinly with a sharp knife.
  • Make the Tzatziki Sauce
    Grate the cucumber and squeeze out excess water using a clean kitchen towel.
  • In a bowl, combine Greek yogurt, grated cucumber, garlic, olive oil, lemon juice, dill, and salt. Mix until smooth and creamy.
  • Warm the Pita Bread
    Heat a dry skillet over medium heat and warm each pita bread for 1–2 minutes per side until soft and pliable.
  • Assemble the Gyros
    Lay a warmed pita bread flat.
  • Spread a generous amount of tzatziki sauce on the center.
  • Add slices of gyro meat, lettuce, tomato, red onion, and feta cheese (if using).
  • Fold the sides of the pita and wrap the bottom with parchment paper or foil to secure.
  • Serve and Enjoy!
    Serve immediately with a side of extra tzatziki and a refreshing Greek salad.
