Hot wings, also known as Buffalo wings, were first served in 1964 at the Anchor Bar in Buffalo, New York. Teressa Bellissimo, the co-owner of the bar, reportedly created the dish as a late-night snack for her son and his friends.

Ingredients
  

For the Wings:

  • 2 pounds (about 1 kg) of chicken wings (drumettes and flats)
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • 2 tablespoons cornstarch (for extra crispiness)

For the Sauce:

  • ½ cup hot sauce (such as Frank’s RedHot)
  • ¼ cup unsalted butter
  • 1 tablespoon honey (optional, for a hint of sweetness)
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon vinegar (optional, for extra tang)

Instructions
 

  • Prepare the Wings
    Preheat your oven to 425°F (220°C) if baking. Line a baking tray with parchment paper and place a wire rack on top.
    Pat the wings dry with paper towels to remove excess moisture. This step ensures crispiness.
    In a large bowl, toss the wings with salt, pepper, garlic powder, smoked paprika, and cornstarch until evenly coated.
  • Cook the Wings
    Oven-Baking: Arrange the wings in a single layer on the wire rack. Bake for 20 minutes, then flip the wings and bake for another 10-15 minutes until golden brown and crispy.
    Deep Frying: Heat oil to 375°F (190°C) in a deep fryer or heavy-bottomed pot. Fry the wings in batches for 8-10 minutes or until golden and cooked through. Drain on paper towels.
  • Prepare the Sauce
    In a small saucepan over low heat, combine the hot sauce, butter, honey (if using), Worcestershire sauce, and vinegar. Stir until the butter melts and the sauce is smooth.
  • Coat the Wings
    Transfer the cooked wings to a large bowl. Pour the warm sauce over the wings and toss gently with tongs until fully coated.
  • Serve and Enjoy
    Serve the hot wings immediately with celery sticks, carrot sticks, and your favorite dipping sauces like ranch or blue cheese.
