  • 2 tablespoons fresh lemon juice
  • 1 tablespoon lemon zest
  • 1 teaspoon vanilla extract

Instructions
 

  • Preheat Your Oven: Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  • Cream the Butter and Sugar: In a large mixing bowl, use a hand or stand mixer to cream together the softened butter and granulated sugar until the mixture is light and fluffy. This should take about 2-3 minutes.
  • Add the Wet Ingredients: Beat in the egg, lemon juice, lemon zest, and vanilla extract until well combined. The lemon juice and zest give the biscuits their signature tangy flavor.
  • Mix the Dry Ingredients: In a separate bowl, whisk together the flour, baking powder, and salt.
  • Combine Wet and Dry Mixtures: Gradually add the dry ingredients to the wet mixture, mixing until just combined. Avoid overmixing to ensure tender biscuits.
  • Shape the Dough: Using a tablespoon or cookie scoop, drop small balls of dough onto the prepared baking sheet, spacing them about 2 inches apart.
