- 2 cups all-purpose flour
- 1 cup granulated sugar
- 1/2 cup unsalted butter, softened
- 3 large eggs
- 1/2 cup milk
- 1/4 cup lemon juice
- 2 tablespoons lemon zest
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
Preheat your oven to 350°F (175°C) and grease a loaf pan.
In a mixing bowl, cream together the softened butter and sugar until light and fluffy.
Beat in the eggs one at a time, ensuring each is fully incorporated.
Add the lemon juice and zest to the mixture, blending well.
In a separate bowl, combine the flour, baking powder, baking soda, and salt.Gradually add the dry ingredients to the wet ingredients, alternating with the milk. Begin and end with the dry ingredients. Pour the batter into the greased loaf pan and bake for 45-55 minutes, or until a toothpick inserted into the center comes out clean.
Allow the lemon bread to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
