- 2 cups of cooked lentils
 - 1 cup of breadcrumbs
 - 1 finely chopped onion
 - 2 minced garlic cloves
 - 1 cup of diced vegetables (carrots, bell peppers, and zucchini work wonders)
 - 2 tablespoons of tomato paste
 - 1 tablespoon of soy sauce
 - 1 teaspoon of dried thyme
 - Salt and pepper to taste
 
 
Preheat your oven to 375°F (190°C).
In a mixing bowl, combine the cooked lentils, breadcrumbs, chopped onion, minced garlic, diced vegetables, tomato paste, soy sauce, dried thyme, salt, and pepper.
Mix the ingredients until well combined.
Transfer the mixture into a greased loaf pan, shaping it into a loaf.
Bake on a preheated oven for 40-45 minutes or until the top is golden brown.
Allow the lentil meatloaf to cool for a few minutes before slicing.
