- 2 cups almond flour
- 1 tablespoon baking powder
- 1 ½ teaspoons xanthan gum
- 4 large eggs or poppy seeds for topping (optional)
- 3 cups shredded mozzarella cheese
- Sesame seeds
Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
In a microwave-safe bowl, combine the almond flour, baking powder, xanthan gum, and mozzarella cheese.
Microwave the mixture in 30-second intervals, stirring in between until the cheese is fully melted and the ingredients are well combined.
Add the eggs to the mixture, one at a time, stirring thoroughly.
Divide the dough into 6 equal parts and shape them into bagel rounds on the prepared baking sheet.
Top the bagels with sesame seeds or poppy seeds if desired.
Bake for 12-15 minutes or until golden brown.
