Equipment

  • Mixing bowl
  • Rolling Pin
  • Knife
  • Frying pan
  • Baking tray
  • Pastry brush

Ingredients

For the Pastry:

  • 2 1/2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1 cup unsalted butter (cold and cubed)
  • 1/4 cup cold water (adjust as needed)

For the Filling:

  • 1 tablespoon vegetable oil
  • 1 medium onion, finely chopped
  • 1 garlic clove, minced
  • 1/2 pound ground beef or minced meat
  • 1 medium carrot, diced
  • 1/2 cup potatoes, diced
  • 1/2 cup frozen peas
  • 1/4 cup beef stock
  • 1 teaspoon thyme
  • 1/2 teaspoon curry powder (optional)
  • Salt and pepper to taste

Egg Wash:

  • 1 egg, beaten

Instructions

  • Prepare the Pastry:
In a large mixing bowl, combine flour and salt.
Add cold, cubed butter and rub it into the flour until the mixture resembles breadcrumbs.
Gradually add cold water, a tablespoon at a time, mixing until a dough forms.
Wrap the dough in plastic wrap and refrigerate for 15 minutes to chill.
  • Make the Filling:
Heat the vegetable oil in a frying pan over medium heat.
Sauté the onions and garlic until fragrant and translucent.
Add the ground beef and cook until browned, breaking up clumps with a wooden spoon.
Stir in the diced carrots, potatoes, and peas. Cook for 5 minutes.
Pour in the beef stock and season with thyme, curry powder (if using), salt, and pepper.
Simmer until the vegetables are tender and the mixture thickens slightly. Remove from heat and let it cool.
  • Assemble the Meat Pies:
Preheat your oven to 375°F (190°C).
Roll out the chilled dough on a floured surface to about 1/8-inch thickness.
Using a round cutter or bowl, cut out circles (about 6 inches in diameter).
Place a spoonful of the cooled filling onto one side of each circle.
Fold the dough over the filling to form a semi-circle and press the edges with a fork to seal.
Transfer the pies to a baking tray lined with parchment paper.
Brush the tops with beaten egg for a golden finish.
  • Bake:
Bake in the preheated oven for 25-30 minutes, or until the pies are golden brown.
Allow to cool slightly before serving.
