Ingredients
  

  • 2 cups of rolled oats
  • 1 cup of whole wheat flour
  • 1 cup of buttermilk
  • 1/2 cup of honey or maple syrup
  • 1/3 cup of melted coconut oil
  • 2 eggs1 teaspoon of baking powder
  • 1/2 teaspoon of baking soda
  • A pinch of salt
  • Optional: Add-ins like raisins, chopped nuts, or berries for an extra burst of flavor.

Instructions
 

  • Preheat your oven to 350°F (175°C) and line the muffin tin with liners.
  • In a bowl, combine the oats and buttermilk, letting it sit for 10 minutes to soften.
  • In another bowl, whisk together the flour, baking powder, baking soda, and salt.
  • Add melted coconut oil, eggs, and honey/maple syrup to the oat mixture. Mix well.
  • Combine the wet and dry ingredients, stirring until just combined. Fold in any optional add-ins.
  • Spoon the batter into the muffin cups and bake for 18-20 minutes or until a toothpick comes out clean.
  • Allow the muffins to cool for a few minutes before transferring them to a wire rack.
